Heritage Turkeys
From
our earliest forefathers to today, turkeys have been the
traditional fare at Thanksgiving tables in the United
States. Today,
turkeys, which can trace their heritage back hundreds of
years, are available in limited supply at supermarkets
around the country. In Kansas City, Hen House Markets
decided to make a commitment to Good Natured Family
Farms’ Heritage Turkeys. The Kansas City Star ran an
article on these rare and remarkable birds and within
hours the hundreds of turkeys were sold.
Saved from extinction, these American Bronze turkeys
have a more pleasing texture: firm, almost steak-like.
The lean breasts and long
legs produce a darker, more flavorful meat.
